I first met Jack Witherspoon a few years ago at a lemonade fundraiser and I was so inspired by his story that I've kept up with him ever since. He is such a cool kid!
Jack was diagnosed with leukemia when he was only two years old. He has bravely faced the the challenges that come with battling a life threatening disease while pursuing his dream to become a chef. Jack says, "During my hospital stays, television and video games were mainly how I entertained myself but they didn't always hold my interest. One day I was channel surfing when I stumbled upon the Food Network. I was totally intrigued!" Jack kept watching and learning with the hopes of making the recipes himself when he returned home from the hospital. "I had found something to do that was totally fun, and even having leukemia coudn't stop me from doing it."
Jack has become the chef he always dreamed of and he's written a great cook book titled "Twist It Up" (a catchphrase he uses to describe his individual spin on cooking). The proceeds from Jack's book and fundraisers go to an endowment he established to support pediatric leukemia research. How awesome is that!
At his first official book signing Jack encouraged me to always believe in my dreams and I think of him and his advice often. He also let me sample some of his favorite recipes. Wow, this kid can cook! His courage, determination and compassion are such and inspriation. He has faced challenges, achieved his dreams and made a differnce in the world. That's what being a Start Me Up Kid is all about!
